Prepare the Potatoes
- Rinse the cubed potatoes under cold water to remove excess starch, then pat dry with a kitchen towel.
Infuse the Oil
- Heat oil in a large, non-stick skillet over medium heat.
- Add cumin seeds and let them sizzle for about 30 seconds until fragrant.
Cook the Potatoes
- Add minced garlic to the pan and sauté for 1 minute until lightly golden.
- Add the cubed potatoes and stir well to coat with the garlic and cumin.
- Sprinkle in turmeric, red chili powder, and salt. Mix thoroughly.
- Cook the potatoes on medium heat for 20–25 minutes, stirring occasionally, until they are golden brown and crispy on the outside and tender inside.
Finish and Serve
- Once cooked, remove from heat and garnish with freshly chopped cilantro.
- Serve hot as a side with your favorite Indian meal or enjoy them as a snack.
