Ingredients

plain yogurt2 cups
(full-fat for creaminess)
cold water1 cup
sugar4 tbsp
(adjust to taste)
ice cubes1 cup
(optional, for serving)

Spices

green cardamom pods3
(seeds extracted and ground)
saffron strandsa pinch
(soaked in 2 tbsp warm milk)

Directions

Prepare the Lassi Mixture

  1. In a blender, combine the plain yogurt, cold water, and sugar.
  2. Blend until the mixture is smooth and frothy.

Add Flavorings

  1. Add the ground cardamom seeds to the blender.
  2. Pour in the saffron milk and give it a quick blend to mix the flavors thoroughly.
Chef's tip: If you prefer your lassi slightly thicker, reduce the water by half a cup.

Serve the Lassi

  1. Pour the lassi into chilled glasses over a few ice cubes if desired.
  2. Garnish with a few strands of saffron or a pinch of ground cardamom for an aromatic finish.
